Feta Egg Taco
A joyful & delicious breakfast alternative for your Sunday mornings!
This is a 5-10 minute job, fun & easy to make and would go down really well with the whole fam (chilli oil entirely optional!)
Small taco-sized tortillas can be a little tricky to find so you can take any sized tortilla wraps and use scissors to cut around a cereal bowl or anything roughly fried-egg-sized. Toast any tortilla off-cuts and use to dip in the eggs and any extra smashed avo.
I’m still thinking about the flavour of that golden, crispy, fried feta…
FULL RECIPE
Ingredients (per taco)
1/2 avocado
1/4 lemon - juiced (optional)
1 egg
75g feta
1 mini wheat tortilla
1 tsp chilli oil
Method:
Smush up the avocado with some salt and lime or lemon juice if you have it. Set aside.
In a hot frying pan, heat up some olive oil then crumble the feta in a circular ring, roughly an egg size. Crack the egg into the centre of the feta circle, pop a lid on then fry until your preferred doneness of the egg.
Onto the tortilla, spread the avocado, pop on the feta fried egg then drizzle over the chilli oil.
Pick up and tuck in. Make as many as you need!
