Kimchi Fried Rice
A staple meal in my household for all mealtimes.
This is a very good blueprint recipe for when you want something light, quick and a little bit spicy.
Here, I’ve added a fried egg on top which works well for breakfast, but you could add in some chopped chicken or bacon, or top with a nice piece of fish.
Also fantastic if you have some leftover veggies or greens in the fridge - chop them up & stir fry them in the pan before adding the rice.

Ingredients (serves 2)
4 spring onions - finely sliced
2 cloves garlic - minced
1 tbsp gochujang paste
2 handfuls of edamame
1 pouch of basmati rice
3 tbsp kimchi - roughly chopped up
2 eggs
Method:
In a hot frying pan, quickly fry the spring onions and garlic in some oil, followed by the gochujang. Toss in the basmati rice and stir through the edamame beans and the kimchi. Season well with salt and pepper.
For a fun presentation, spoon the rice into a bowl and press down to that it’s packed in nice & snugly then turn it out onto a plate. Voila!
Fry and egg in a separate pan then top the rice with the egg! Enjoy!
