This is a truly joyful pasta dish that you’ll make again and again.

We’re taking all of the flavours of ratatouille and roasting them really deeply and mixing through some warm rigatoni with lots of basil and a tangy sundried tomato vinaigrette.

This is a great one to batch up at the beginning of the week and enjoy for lunch, dinner or it works beautifully as a side dish alongside a weekend bbq spread!
