Speedy Sardine Spaghetti
Tinned sardines are one of my new favourite discoveries and work perfectly in this pasta dish with sweet tomatoes & fresh lemon & herbs

Ingredients (serves 2)
1 onion- finely slicedÂ
2 garlic cloves - finely slicedÂ
1 tin of sardines (100g)Â - I used sardines in tomato sauce which helps with the flavour of the sauce but you can use sardines in oil or water
5 cherry tomatoes - halvedÂ
1 tbsp tomato pureeÂ
1 lemon - zestedÂ
200g dried spaghetti - cook to packet instructionsÂ
20g fresh flat leaf parsley - roughly choppedÂ
Method:Â
Cook your pasta in salted boiling water.
Sweat the onions and garlic down in a frying pan on medium heat in lots of olive oil. Add in the sardines and break them up with a spatula. Add in the tomato puree, give it a mix then add in the cherry tomatoes. Leave that to fry off for 3-4 minutes to allow the tomatoes to soften, then zest in the lemon.Â
Spoon over some pasta water from the other pan (approx 100ml) to loosen the sauce.Â
Use tongs to drag over the pasta and give everything a really good mix around. Finish off by stirring through some parsley, spoon generously into bowls and top with more parsley! Enjoy!
